The days at Uncle Henry's begin early in the morning. One of the workers comes in 30 minutes before the rest of the workers and mixes the first batch of dough, so it will be ready to twist when the others arrive. Most workers do not drive cars, but arrive by bicycle or the van that is provided to pick them up.

After the pretzels are twisted, they go through a cooking process, then put on a peel, salted and put into the stone hearth oven. From the oven they go through the drying process. They are released from the dryer onto the packing belt, where they are put in the appropriate bags. After he bags are sufficiently cooled they are sealed and put into boxes. The boxes are stacked on a skid. When the skid is full, it is moved outside, wrapped and marked for delivery or pick up. The process of hand twisting, being baked in a stone hearth oven and the supervised drying process gives our pretzels a great delicious taste and crunch.

All of the pretzels are hand rolled and hand twisted.


We work at least one shift each day. Several days a week we work two shifts. This means we are twisting pretzels from 6:30 in the morning until 7:30 at night. After the twisting is done, cleanup begins so that everything is clean and ready to go for day shift the next morning.

Each one of our pretzels has its own distinctive "look." Not all are in a perfect shape, some may have baking splits, the salt may be scattered and some may even break. BUT, don't be fooled by the broken ones. They are very tasty especially the twisted or end pieces. All of these natural "imperfections" are what makes these pretzels "perfect."
